Kevin Erving Executive Chef Kevin Erving was born to cook and believes the profession chose him, versus the other way around, and would not have had it any other way. “I have been passionate about cooking since the age of seven when I held my first spatula and stirred a 40 gallon batch of clam chowder alongside the executive chef at my mother’s restaurant. I loved everything about the kitchen, from washing dishes to peeling potatoes – every aspect fascinated me.” As Executive Chef of Four Seasons Resorts L?na`i, Chef Erving oversees all culinary operations at Four Seasons Resort L?na`i at Manele Bay and Four Seasons Resort L?na`i, The Lodge at Koele. Between the two resorts, there are seven food and beverage outlets. The use of the finest ingredients, many from local farmers and fishermen is of great importance to Chef Erving, and he has mastered the incorporation of local and regional flavors into classic cuisine. Chef Erving’s sustainable approach and farm-to-table philosophy is apparent in the various menus at the Resorts, using only the freshest quality products, picked in its prime. With the diversity of cultures in Hawaii and the region, Chef Erving enjoys experimenting with the variety of ingredients and flavors available to him and his culinary team. Chef Erving, whose accomplished culinary skills make him appear seasoned beyond his youthful age of 38 years, was born and raised in Seattle, Washington. A graduate of the prestigious Art Institute of Seattle, Chef Erving began his career with Four Seasons Hotel Seattle in 1991. Chef Erving joined Four Seasons Resorts L?na`i from Four Seasons Hotel Vancouver in June 2011. Previous to this move, Chef Erving served as Executive Sous Chef at the iconic Ritz Carlton Hotel Chicago, a Four Seasons Hotel. Chef Erving lives in L?na`i City with his wife Jennifer, and two young children Carter and Sophia. When not in the kitchen, Chef Erving enjoys playing guitar, outdoor recreation and continually educating himself on sustainable cooking practices. Therefore, he is passionate about cooking with the seasons, as well as preserving with the seasons by canning soups and salsa’s, or making pickles and jam.
